Mushroom and Cheese Stuffed Chicken

Ingredients
- 4 boneless chicken breasts
- 1 cup sliced mushrooms
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the chicken breasts by creating a pocket in each one. To do this, make a horizontal cut about three-fourths of the way through the breast, being careful not to cut all the way through.
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the sliced mushrooms to the skillet and cook until they are tender and any liquid has evaporated, approximately 5 minutes.
- Remove the skillet from heat and let the mushroom mixture cool slightly.
- Once cooled, mix in the shredded cheese, dried thyme, salt, and pepper.
- Stuff each chicken breast with an equal amount of the mushroom and cheese mixture, ensuring that the filling is evenly distributed.
- Secure the opening with toothpicks to prevent the mixture from spilling out during cooking.
- Place the stuffed chicken breasts in a lightly greased baking dish and sprinkle with additional salt and pepper, if desired.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- Remove the toothpicks before serving. Serve hot with a side of steamed vegetables or a fresh salad.
