Mushroom and Cheese Stuffed Chicken

Ingredients

  • 4 boneless chicken breasts
  • 1 cup sliced mushrooms
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the chicken breasts by creating a pocket in each one. To do this, make a horizontal cut about three-fourths of the way through the breast, being careful not to cut all the way through.
  3. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  4. Add the sliced mushrooms to the skillet and cook until they are tender and any liquid has evaporated, approximately 5 minutes.
  5. Remove the skillet from heat and let the mushroom mixture cool slightly.
  6. Once cooled, mix in the shredded cheese, dried thyme, salt, and pepper.
  7. Stuff each chicken breast with an equal amount of the mushroom and cheese mixture, ensuring that the filling is evenly distributed.
  8. Secure the opening with toothpicks to prevent the mixture from spilling out during cooking.
  9. Place the stuffed chicken breasts in a lightly greased baking dish and sprinkle with additional salt and pepper, if desired.
  10. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  11. Remove the toothpicks before serving. Serve hot with a side of steamed vegetables or a fresh salad.
