Mushroom and Onion Rice

rice, onions, mushrooms, garlic.

Ingredients

  • 2 cups of rice
  • 1 medium onion, diced
  • 8 ounces of mushrooms, sliced
  • 3 cloves of garlic, minced
  • 4 cups of water or vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons of olive oil

Instructions

  1. Rinse the rice under cold water until the water runs clear. Drain and set aside.
  2. In a large pan, heat the olive oil over medium heat. Add the diced onion and minced garlic. Sauté until the onion becomes translucent and the garlic becomes fragrant.
  3. Add the sliced mushrooms to the pan and cook until they release their moisture and start to brown.
  4. Add the rinsed rice to the pan and stir well to coat it with the onion, garlic, and mushroom mixture.
  5. Pour in the water or vegetable broth and season with salt and pepper. Stir to combine.
  6. Bring the mixture to a boil, then reduce the heat to low and cover the pan with a lid. Let the rice simmer for about 15-20 minutes, or until all the liquid is absorbed and the rice is tender.
  7. Remove the pan from heat and let it sit, covered, for an additional 5 minutes to allow the rice to steam.
  8. Fluff the rice with a fork before serving. Enjoy the mushroom and onion rice as a side dish or as a main course.
