Mushroom and Onion Rice
What Started it all:
rice, onions, mushrooms, garlic.
Ingredients
- 2 cups of rice
- 1 medium onion, diced
- 8 ounces of mushrooms, sliced
- 3 cloves of garlic, minced
- 4 cups of water or vegetable broth
- Salt and pepper to taste
- 2 tablespoons of olive oil
Instructions
- Rinse the rice under cold water until the water runs clear. Drain and set aside.
- In a large pan, heat the olive oil over medium heat. Add the diced onion and minced garlic. Sauté until the onion becomes translucent and the garlic becomes fragrant.
- Add the sliced mushrooms to the pan and cook until they release their moisture and start to brown.
- Add the rinsed rice to the pan and stir well to coat it with the onion, garlic, and mushroom mixture.
- Pour in the water or vegetable broth and season with salt and pepper. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low and cover the pan with a lid. Let the rice simmer for about 15-20 minutes, or until all the liquid is absorbed and the rice is tender.
- Remove the pan from heat and let it sit, covered, for an additional 5 minutes to allow the rice to steam.
- Fluff the rice with a fork before serving. Enjoy the mushroom and onion rice as a side dish or as a main course.
