This unique fusion dish combines the rich, salty flavors of feta cheese with the umami of nori seaweed, all wrapped up in a delicious burrito. Perfect for a light lunch or a fun dinner, this recipe will serve 4 people.
Ingredients
- 4 large nori sheets
- 8 oz (225 g) feta cheese, crumbled
- 2 cups cooked rice
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, julienned
- 1/2 cup red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
- 1/4 cup soy sauce (optional, for dipping)
Instructions
- Cook the rice according to package instructions and let it cool slightly.
- Crumble the feta cheese into small pieces.
- Slice the avocado, halve the cherry tomatoes, julienne the cucumber, and thinly slice the red onion.
- Chop the fresh cilantro and set aside.
- Place a nori sheet shiny side down on a clean, dry surface or a bamboo sushi mat if you have one.
- Spread a thin layer of cooked rice over each nori sheet, leaving about 1 inch (2.5 cm) of space at the top for sealing.
- Evenly distribute the crumbled feta cheese across the middle of each sheet.
- Add slices of avocado, cherry tomatoes, cucumber, red onion, and a sprinkle of fresh cilantro on top of the feta cheese.
- Carefully roll up the nori sheet from the bottom, tucking in the ingredients as you go. Use a little water to moisten the edge of the nori sheet to seal the burrito.
- Repeat with the remaining nori sheets and ingredients.
- Cut each burrito in half if desired and serve with lime wedges and soy sauce for dipping.
