Oh-So-Delish Leek and Garlic Roast for a Happy Crew!

Hey, gang! Today we're gonna knock it outta the park with a super-easy, crazy-delicious vegan recipe perfect for a cozy night in. Say hello to this amazing Leek and Garlic Roast that's sure to become a new favorite!
Ingredients
- 2 large leeks, cleaned and chopped (white and light green parts only)
- 4 cloves of garlic, peeled and minced
- 1 teaspoon baking soda
- Salt and pepper, to taste
- 2 tablespoons olive oil (optional)
Instructions
- Preheat your oven to 425°F (220°C). Yes, it's gonna get hot in here!
- In a large bowl, toss together those gorgeous leeks and garlic until they're BFFs.
- Sprinkle the baking soda, salt, and pepper over the leek-garlic mixture, and toss again until everything is coated.
- If you're feeling extra fancy, drizzle those 2 tablespoons of olive oil over the mixture. Trust me, it makes a difference!
- Spread the leek-garlic mixture out in a single layer on a baking sheet. You got this!
- Roast in the preheated oven for about 25-30 minutes, or until the leeks are tender and lightly caramelized.
- Remove from the oven, and let it cool for a few minutes. Serve hot, and enjoy the oohs and aahs from your crew!
