One-Pot Chicken Stew Recipe

What Started it all:
1 pound of chicken, 1 cup of chopped carrots, potatoes
Heat the olive oil in a large pot over medium-high heat.
Ingredients
- 1 pound of chicken breast, cut into bite-sized pieces
- 1 cup of chopped carrots
- 1 cup of diced potatoes
- 1 teaspoon of salt
- ½ teaspoon of black pepper
- 1 tablespoon of olive oil
- 3 cups of chicken broth
- 2 cloves of garlic, minced
- 1 onion, chopped
- 2 teaspoons of dried thyme
- 1 bay leaf
Instructions
- Heat the olive oil in a large pot over medium-high heat.
- Add the chicken and season with salt and black pepper. Cook for 5 minutes or until browned.
- Add the garlic and onion, cook until the onion is translucent, about 3 minutes.
- Add the chicken broth, carrots, potatoes, thyme and bay leaf.
- Bring to a simmer then reduce the heat to medium-low.
- Cover and cook for 30 minutes, or until the vegetables are tender and the chicken is cooked through.
- Discard the bay leaf and serve hot.
