One-Pot Chicken Stew Recipe

What Started it all:
1 pound of chicken, 1 cup of chopped carrots, potatoes

Heat the olive oil in a large pot over medium-high heat.

Ingredients

  • 1 pound of chicken breast, cut into bite-sized pieces
  • 1 cup of chopped carrots
  • 1 cup of diced potatoes
  • 1 teaspoon of salt
  • ½ teaspoon of black pepper
  • 1 tablespoon of olive oil
  • 3 cups of chicken broth
  • 2 cloves of garlic, minced
  • 1 onion, chopped
  • 2 teaspoons of dried thyme
  • 1 bay leaf

Instructions

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the chicken and season with salt and black pepper. Cook for 5 minutes or until browned.
  3. Add the garlic and onion, cook until the onion is translucent, about 3 minutes.
  4. Add the chicken broth, carrots, potatoes, thyme and bay leaf.
  5. Bring to a simmer then reduce the heat to medium-low.
  6. Cover and cook for 30 minutes, or until the vegetables are tender and the chicken is cooked through.
  7. Discard the bay leaf and serve hot.
