Ingredients

  • 1.5 kg (3.3 lbs) ham
  • 2 oranges
  • 4 eggs

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Score the fat of the ham in a diamond pattern, being careful not to cut too deep into the meat.
  3. Squeeze the juice of one orange over the ham, making sure to coat it evenly.
  4. Place the ham in a roasting pan and cover it with foil.
  5. Bake the ham in the preheated oven for approximately 20 minutes per pound, or until the internal temperature reaches 60°C (140°F).
  6. While the ham is cooking, prepare the glaze by combining the juice of the remaining orange with 2 tablespoons of brown sugar in a small saucepan.
  7. Heat the glaze over medium heat until the sugar has dissolved and the mixture has thickened slightly.
  8. Remove the foil from the ham during the last 15 minutes of cooking and brush the glaze over the surface.
  9. Return the ham to the oven, uncovered, and continue cooking until the glaze is sticky and caramelized.
  10. While the ham is resting, prepare the eggs to your liking. Whether you prefer them fried, scrambled, or poached, cook them to perfection.
  11. Serve the ham sliced with a side of eggs, and enjoy!
