  • 4 mackerel fillets
  • 1 large zucchini, sliced into 1/4-inch thick rounds
  • 1 cup cooked white rice
  • Cooking oil or butter for frying

  1. Preheat your stove to medium-high heat.
  2. Season the mackerel fillets with salt and pepper.
  3. Add a small amount of oil or butter to a non-stick skillet and sear the mackerel fillets for 2-3 minutes on each side, until cooked through.
  4. While the mackerel is cooking, heat a separate pan with a tablespoon of oil over medium heat. Add the sliced zucchini and cook until tender, stirring occasionally.
  5. In a small saucepan, warm the cooked rice over low heat, stirring occasionally.
  6. To serve, place a mackerel fillet on each plate, top with a spoonful of warm rice, and garnish with a slice of zucchini.
