Get ready for a flavor bomb that combines tender pork with earthy kale and convenient canned veggies. A match made in heaven!

Ingredients

  • 4 pork loins
  • 2 bunches of kale, stems removed and discarded, leaves torn into bite-sized pieces
  • 1 can of mixed vegetables (such as corn, peas, and carrots)
  • 2 tablespoons of vegetable oil
  • 2 cloves of garlic, minced
  • 1 teaspoon of grated ginger
  • Salt and pepper to taste
  • 1 tablespoon of soy sauce (optional)
  • 1 tablespoon of oyster sauce (optional)

Instructions

  1. Preheat your wok or large skillet over high heat.
  2. Add 1 tablespoon of vegetable oil to the wok and swirl it around to coat the bottom.
  3. Add the garlic and ginger to the wok and sauté for 1 minute, until fragrant.
  4. Add the pork loins to the wok and sear for 2-3 minutes on each side, until browned.
  5. Remove the pork from the wok and set aside.
  6. In the same wok, add the remaining 1 tablespoon of vegetable oil.
  7. Add the kale to the wok and stir-fry for 2-3 minutes, until wilted.
  8. Add the canned vegetables to the wok and stir-fry for an additional 2 minutes.
  9. Add the soy sauce and oyster sauce (if using) to the wok and stir-fry for 1 minute.
  10. Add the pork back to the wok and stir-fry for an additional 2-3 minutes, until the pork is cooked through.
  11. Season with salt and pepper to taste.
  12. Serve hot and enjoy!
