Pan-Seared White Fish with Peas and Lentils

What Started it all:

A delicious and flavorful dish featuring pan-seared white fish served with peas and lentils.
Ingredients
- 4 x 6 oz white fish fillets
- 1 cup split red lentils, rinsed and drained
- 1 cup fresh or frozen peas
- 2 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp ground cumin
- Salt and pepper, to taste
- Fresh cilantro leaves, for garnish
Instructions
- Preheat your skillet over medium-high heat.
- Season the fish fillets with salt and pepper.
- Add the olive oil to the skillet and swirl it around. Now, add the diced onion and cook until it's translucent, about 3-4 minutes.
- Add the minced garlic and cook for another minute, until fragrant.
- Add the split red lentils and cook for 1-2 minutes, until they start to brown.
- Add the peas and cook until they're tender, about 2-3 minutes.
- Add the white fish fillets to the skillet and sear for 2-3 minutes on each side, until cooked through.
- Serve the fish on top of the pea and lentil mixture, garnished with fresh cilantro leaves.
