Paneer and Mozzarella Stuffed Bell Peppers

Ingredients
- 4 large bell peppers (any color)
- 200 grams paneer, crumbled
- 150 grams mozzarella cheese, shredded
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon cumin powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh cilantro or parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and garlic, and sauté until they turn translucent, about 3-4 minutes.
- Stir in the corn kernels and cook for another 2 minutes. Add the crumbled paneer, cumin powder, paprika, salt, and pepper. Mix well and cook for another 5 minutes until the mixture is well combined and heated through.
- Remove the skillet from heat and let the mixture cool slightly. Stir in the shredded mozzarella cheese.
- Stuff each bell pepper with the paneer and mozzarella mixture, pressing down lightly to pack it in.
- Place the stuffed bell peppers in a baking dish. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is melted and bubbly.
- Remove the stuffed peppers from the oven and let them cool slightly. Garnish with freshly chopped cilantro or parsley before serving.
