Paneer and Mozzarella Stuffed Bell Peppers

Ingredients
- 4 large bell peppers (any color)
- 200g paneer, crumbled
- 150g mozzarella cheese, shredded
- 1 cup corn kernels (fresh or frozen)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh cilantro or parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of the peppers with olive oil and place them in a baking dish.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion and garlic, and sauté until they are soft and translucent.
- Stir in the corn kernels and crumbled paneer. Cook for about 5 minutes, allowing the flavors to meld together.
- Season the mixture with paprika, dried oregano, salt, and pepper. Mix well and remove from heat.
- Spoon the paneer and corn mixture into each bell pepper, filling them about three-quarters full. Top each pepper with a generous amount of shredded mozzarella cheese.
- Place the stuffed bell peppers in the preheated oven and bake for 25-30 minutes, or until the peppers are tender and the cheese is melted and golden brown.
- Remove the peppers from the oven and let them cool slightly. Garnish with fresh cilantro or parsley if desired. Serve warm.
