Ingredients

  • 4 skinless chicken breasts
  • 2 tbsp. paprika
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1 cup white rice
  • 2 cups water

Instructions

  1. Rinse the rice in a strainer under cold running water and set it aside.
  2. Season the chicken breasts with 1 tbsp. paprika, 1/2 tsp. salt and 1/2 tsp. black pepper.
  3. Heat a skillet over medium-high heat, and then add two tablespoons of olive oil.
  4. Once the oil is hot, add the chicken breasts to the skillet and allow them to cook for 6-7 minutes or until it turns golden brown.
  5. Turn the chicken over to the other side and cook it for an additional 6–7 minutes.
  6. Once the chicken is cooked through, remove it from the skillet and keep it warm.
  7. Add the remaining paprika to the skillet and saute it for about 20–30 seconds.
  8. Pour in the water and remaining salt, and then bring it to a boil.
  9. Add your rice to the skillet and stir it well.
  10. Turn down the heat to the lowest possible setting, cover the skillet and allow it to simmer for 18-20 minutes.
  11. Once the rice has absorbed all the liquid, remove the skillet from the heat.
  12. Fluff the rice with a fork and serve it alongside the chicken.
