Pea medley curry

Ingredients
- 2 cups of fresh or frozen peas
- 1 cup of chopped tomatoes
- 1 large onion, finely chopped
- 2 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 2 tablespoons of vegetable oil
- 1 teaspoon of cumin seeds
- 1 teaspoon of mustard seeds
- 1 teaspoon of turmeric powder
- 1 teaspoon of coriander powder
- 1 teaspoon of garam masala
- 1 teaspoon of red chili powder (adjust to taste)
- 1 cup of coconut milk
- Salt to taste
- Fresh cilantro for garnish
Instructions
- If using fresh peas, shell them. If using frozen peas, rinse them under cold water to thaw. Chop the tomatoes, finely chop the onion, mince the garlic, and grate the ginger.
- In a large pan, heat the vegetable oil over medium heat. Add the cumin seeds and mustard seeds. Allow them to sizzle for about 30 seconds until fragrant.
- Add the chopped onions to the pan and sauté until golden brown. Add the minced garlic and grated ginger, and cook for another minute.
- Stir in the turmeric powder, coriander powder, garam masala, and red chili powder. Cook the spices for a minute, stirring constantly to prevent burning.
- Add the chopped tomatoes to the pan and cook until they soften and blend with the spices, about 5-7 minutes.
- Stir in the peas and mix well to coat them with the spice mixture.
- Pour in the coconut milk and stir to combine. Bring the curry to a gentle simmer, then reduce the heat and let it cook for about 10-15 minutes, allowing the flavors to meld together.
- Season the curry with salt to taste. Garnish with fresh cilantro before serving.
