Perfectly Seared Beef Tenderloin with Nutty Brussels Sprout Puree

Beef Tenderloin, Brussels sprout, nuts (almonds, walnuts), food processor

Ingredients
- 4 beef tenderloin steaks
- 400g Brussels sprouts
- Handful of almonds
- Handful of walnuts
Instructions
- 1. Preheat the grill to high heat.
- 2. Season the beef tenderloin steaks generously with salt and pepper.
- 3. Place the seasoned steaks on the grill and cook for 4-5 minutes on each side for a perfect medium-rare.
- 4. While the steaks are grilling, trim the ends of the Brussels sprouts and cut them in half.
- 5. Boil the Brussels sprouts until tender, then drain and transfer to a food processor.
- 6. Add the almonds and walnuts to the food processor and pulse until you achieve a smooth, nutty puree.
- 7. Season the puree with salt and pepper to taste.
- 8. Serve the perfectly seared beef tenderloin steaks on a bed of the nutty Brussels sprout puree.
