Pineapple Chicken Fried Rice

This recipe combines the savory flavors of chicken and rice with the sweetness of pineapple to create a delicious and satisfying meal for four.
Ingredients
- 2 cups of cooked rice
- 1 lb of chicken, diced
- 1 cup of fresh pineapple, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 2 eggs, beaten
- 3 tablespoons of soy sauce
- 1 tablespoon of vegetable oil
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Add the diced chicken and cook until browned and cooked through.
- Push the chicken to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until cooked, then mix them with the chicken.
- Add the chopped onions and garlic to the skillet and sauté until the onions are translucent.
- Stir in the cooked rice and pineapple, mixing well with the other ingredients.
- Pour the soy sauce over the rice mixture and stir until everything is evenly coated.
- Season with salt and pepper to taste.
- Cook for a few more minutes, allowing the flavors to meld together.
- Serve the pineapple chicken fried rice hot, garnished with chopped green onions.
