Pineapple Chicken Sandwich

A delicious and refreshing sandwich with grilled chicken and juicy pineapple slices. Perfect for a summer lunch or dinner.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 pineapple slices
  • 8 slices of bread
  • 4 lettuce leaves
  • 4 tomato slices
  • 4 tablespoons mayonnaise
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts with salt and pepper on both sides.
  3. Grill the chicken for about 6-8 minutes per side, or until cooked through.
  4. While the chicken is grilling, toast the bread slices in a toaster or on a grill pan.
  5. Remove the chicken from the grill and let it rest for a few minutes. Then, slice it into thin strips.
  6. Spread mayonnaise on one side of each bread slice.
  7. Place a lettuce leaf on four of the bread slices.
  8. Top with grilled chicken slices, pineapple slices, and tomato slices.
  9. Cover with the remaining bread slices, mayonnaise side down.
  10. Cut the sandwiches in half and serve.
