Ingredients
- 1 cup brown sugar
- 1/2 cup unsalted butter (1 stick)
- 1 can (20 oz) pineapple slices, drained (reserve juice)

- 1 cup granulated sugar
- 1/2 cup milk
- 2 large eggs
- 1/2 teaspoon vanilla extract
- 2 teaspoons baking powder
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a 9-inch round cake pan, melt the butter over low heat. Once melted, sprinkle the brown sugar evenly over the butter.
- Place the pineapple slices on top of the brown sugar mixture, and if desired, place a maraschino cherry in the center of each pineapple slice.
- In a mixing bowl, combine the flour, granulated sugar, baking powder, and salt. Mix well.
- In another bowl, whisk together the milk, eggs, vanilla extract, and 1/2 cup of reserved pineapple juice.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Carefully pour the cake batter over the pineapple slices in the pan, spreading it evenly.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for about 10 minutes. Then, run a knife around the edges and carefully invert the cake onto a serving plate.
