Potato and Onion Frittata

Ingredients

  • 4 medium-sized potatoes, peeled and thinly sliced
  • 1 large onion, thinly sliced
  • 8 eggs
  • Salt, to taste
  • Black pepper, to taste
  • Olive oil, for frying

Instructions

  1. In a large non-stick skillet, heat some olive oil over medium heat.
  2. Add the sliced potatoes and onions to the skillet and sauté until they become tender and slightly golden brown. Season with salt and black pepper.
  3. In a separate bowl, crack the eggs and whisk them until well beaten.
  4. Pour the beaten eggs over the potatoes and onions in the skillet. Gently mix to ensure even distribution.
  5. Cover the skillet and cook on low heat for about 10-15 minutes, or until the eggs are set and cooked through.
  6. Once the frittata is cooked, carefully slide it onto a serving plate.
  7. Cut the frittata into wedges and serve hot.
