Potato and Onion Frittata

Ingredients
- 4 medium-sized potatoes, peeled and thinly sliced
- 1 large onion, thinly sliced
- 8 eggs
- Salt, to taste
- Black pepper, to taste
- Olive oil, for frying
Instructions
- In a large non-stick skillet, heat some olive oil over medium heat.
- Add the sliced potatoes and onions to the skillet and sauté until they become tender and slightly golden brown. Season with salt and black pepper.
- In a separate bowl, crack the eggs and whisk them until well beaten.
- Pour the beaten eggs over the potatoes and onions in the skillet. Gently mix to ensure even distribution.
- Cover the skillet and cook on low heat for about 10-15 minutes, or until the eggs are set and cooked through.
- Once the frittata is cooked, carefully slide it onto a serving plate.
- Cut the frittata into wedges and serve hot.
