This delightful dish combines the comforting flavors of potatoes and tomatoes with a surprise twist—hidden eggs inside! Perfect for a family meal or a special brunch, this recipe is sure to impress and satisfy.
Ingredients
- 4 medium potatoes
- 4 large tomatoes
- 4 large eggs
- 1 cup shredded cheese (cheddar or your favorite)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C). Wash and dry the potatoes and tomatoes.
- Peel the potatoes and cut them into small cubes. In a large skillet, heat the olive oil over medium heat. Add the potato cubes and cook until golden brown and tender, about 10-12 minutes. Season with salt, pepper, and paprika. Remove from heat and set aside.
- Cut the tops off the tomatoes and carefully scoop out the insides using a spoon, creating a hollow space. Be sure not to puncture the outer walls of the tomatoes. Lightly season the inside with a pinch of salt and pepper.
- Place a spoonful of cooked potatoes at the bottom of each hollowed-out tomato. Crack an egg into each tomato, on top of the potatoes. Sprinkle shredded cheese over the eggs.
- Place the filled tomatoes in a baking dish. Bake in the preheated oven for 15-20 minutes, or until the eggs are set to your desired doneness and the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes. Garnish with fresh parsley if desired. Serve warm and enjoy!
