  • 4 pork chops
  • 2 large beets
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated ginger
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Fresh cilantro leaves for garnish


  1. Preheat the pressure cooker to high pressure.
  2. In a blender or food processor, combine peanut butter, soy sauce, honey, rice vinegar, ginger, and red pepper flakes. Blend until smooth.
  3. Season the pork chops with salt and pepper.
  4. In the pressure cooker, add 2 tablespoons of oil and swirl it around. Add the pork chops and cook for 8-10 minutes.
  5. While the pork chops are cooking, peel the beets and slice them into thin wedges.
  6. Once the pork chops are done, remove them from the pressure cooker and set aside. Add the beet wedges to the pressure cooker and cook for an additional 2-3 minutes.
  7. Add the peanut butter glaze to the pressure cooker and stir to combine.
  8. Serve the pork chops with the glazed beets and garnish with cilantro leaves.
