Pressure Cooker Pork Chops with Roasted Potatoes and Fresh Tomato Salsa

A Hearty and Flavorful One-Pot Meal for 4


  • 1.5 lbs Pork Chops
  • 2 large Potatoes, peeled and cubed
  • 2 large Tomatoes, diced
  • 2 tbsp Olive Oil
  • Salt and Pepper to taste
  • Fresh Cilantro leaves for garnish (optional)


  1. Preheat the pressure cooker to 'meat/stew' setting.
  2. In the pressure cooker, heat the olive oil over medium-high heat. Add the pork chops and cook until browned on both sides, about 2-3 minutes per side. Remove the pork chops and set aside.
  3. Add the diced potatoes to the pressure cooker and cook for 2 minutes, stirring occasionally.
  4. Add the browned pork chops back to the pressure cooker, along with the diced tomatoes, salt, and pepper. Stir to combine.
  5. Close the lid of the pressure cooker and set the valve to 'sealing'. Cook for 12-15 minutes, or until the pork chops are cooked through and the potatoes are tender.
  6. Quick-release the pressure cooker and carefully open the lid. Garnish with fresh cilantro leaves, if desired.
  7. Serve hot and enjoy!
