Ingredients
- 1 cup Whey Protein
- 500g Brussels sprouts, trimmed and halved
- 1/2 teaspoon baking soda
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 teaspoon chili flakes (optional)
- Salt and pepper to taste
- Grated Parmesan cheese (optional)
- Fresh lemon juice (optional)
Instructions
- Wash and trim the Brussels sprouts, cutting them in half.
- Bring a pot of water to boil, add a pinch of salt and 1/2 teaspoon of baking soda. This helps retain the bright green color of the sprouts.
- Blanch the Brussels sprouts for 3-4 minutes until they are just tender but still vibrant green. Drain and set aside.
- In a large pan, heat the olive oil over medium heat.
- Add the minced garlic and chili flakes (if using), sauté for about 1 minute until fragrant.
- Add the blanched Brussels sprouts to the pan, season with salt and pepper, and cook for another 5-7 minutes, stirring occasionally, until they are golden brown and crispy on the edges.
- In a small bowl, mix the whey protein with a little water to form a smooth paste.
- Gradually add more water until you reach a sauce-like consistency.
- Pour the whey protein sauce over the Brussels sprouts in the pan, stirring well to coat evenly. Cook for another 2-3 minutes until the sauce thickens slightly.
- Transfer the Brussels sprouts to a serving dish.
- Sprinkle with grated Parmesan cheese and a squeeze of fresh lemon juice, if desired.
- Serve immediately, preferably with some whole grain bread or a light salad on the side.
