Ingredients

  • 2 pounds pulled pork
  • 1 cup mixed mushrooms (such as cremini, shiitake, and button), sliced
  • 2 cups brewed tea (strong black tea works best)
  • 1 cup uncooked white rice
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: 1 tablespoon honey, 1 teaspoon Dijon mustard

Instructions

  1. In the rice cooker, combine the uncooked rice and brewed tea. Stir to combine, then add the olive oil, salt, and pepper. Mix well.
  2. Add the sliced mushrooms to the rice cooker and stir to combine.
  3. Add the pulled pork to the rice cooker, breaking it up with a spoon or spatula as you go.
  4. If using, add the honey and Dijon mustard to the rice cooker and stir to combine.
  5. Turn on the rice cooker and cook according to the manufacturer's instructions.
  6. Once the rice is cooked and the liquid has been absorbed, fluff the mixture with a fork and serve hot.
