- 5 Egg Yolks
- 500ml Milk
- 10g Gelatin Powder

- Dissolve Gelatin: In a small bowl, sprinkle the gelatin powder over 50ml of cold milk. Let it sit for about 5 minutes until it blooms. This is crucial; don’t skip it.
- Heat the Milk: In a saucepan, heat the remaining milk over medium heat until it’s steaming but not boiling. For heaven's sake, keep an eye on it!
- Combine Ingredients: Whisk the egg yolks into the steaming milk until well combined. Then, add the bloomed gelatin mixture, stirring until it’s dissolved.
- Mix in Pumpkin: Fold in the pumpkin puree into the milk and egg mixture. Ensure it’s fully combined. This is where you can make or break the dish, so don’t rush it!
- Pour into Molds: Carefully pour the mixture into the heart-shaped molds. Make sure to tap them gently on the counter to remove any air bubbles. We want perfection, not a lumpy mess!
