Øqueyyurî (pronounced: oh-kway-YUR-ee) is a unique fusion dish combining the delicious flavors of BBQ with the elegance of sushi, all wrapped up in a crispy fried exterior. Perfect for impressing your guests or enjoying a special night in, this recipe is adjusted to serve 4 people.
Ingredients
- 2 cups sushi rice
- 2 1/2 cups water
- 1/2 cup rice vinegar
- 1/4 cup sugar
- 1 tsp salt
- 8 sheets nori (seaweed)
- 1 lb BBQ chicken (shredded)
- 1 cucumber (julienned)
- 1 avocado (sliced)
- 1/2 cup pickled ginger
- 1/4 cup soy sauce
- 1/4 cup mayonnaise
- 1 tbsp sriracha
- 2 cups panko breadcrumbs
- 2 eggs (beaten)
- 1 cup all-purpose flour
- Oil for frying
Instructions
- Rinse the sushi rice under cold water until the water runs clear.
- Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions.
- In a small saucepan, heat the rice vinegar, sugar, and salt until dissolved. Let it cool.
- Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow it to cool to room temperature.
- Shred the BBQ chicken.
- Julienne the cucumber and slice the avocado.
- Lay a sheet of nori on a bamboo sushi mat.
- Wet your hands and spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top.
- Arrange a line of BBQ chicken, cucumber, and avocado along the bottom edge of the rice.
- Roll the sushi tightly using the bamboo mat to help shape it.
- Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.
- Dredge each sushi roll in flour, then dip it in the beaten eggs, and finally coat it with panko breadcrumbs.
- Heat oil in a deep fryer or large pot to 350°F (175°C).
- Fry the breaded sushi rolls until golden brown, about 2-3 minutes.
- Remove and drain on paper towels.
- In a small bowl, mix mayonnaise and sriracha to taste.
- Slice the fried sushi rolls into bite-sized pieces.
- Garnish with pickled ginger and serve with soy sauce and spicy mayo on the side.
