Quick and Easy Chicken and Rice Recipe

Ingredients
- 4 chicken breasts
- 2 cups of rice
- 4 cups of water
- Salt to taste
- Pepper to taste
- 2 tablespoons of olive oil or cooking spray
Instructions
- Rinse the rice under cold water to remove any excess starch. Drain well.
- In a large pot, bring the water to a boil. Add the rice and a pinch of salt. Reduce the heat to low and cover the pot. Let the rice simmer for about 15-20 minutes or until all the water is absorbed and the rice is tender.
- Season the chicken breasts with salt and pepper on both sides.
- Heat the olive oil or cooking spray in a large skillet over medium heat.
- Add the chicken breasts to the skillet and cook for about 6-8 minutes on each side, or until they reach an internal temperature of 165°F (74°C).
- Once cooked, remove the chicken from the skillet and let it rest for a few minutes before slicing.
- Serve the cooked chicken breasts over a bed of fluffy rice.
