Quick and Easy Chicken and Rice Recipe

Ingredients

  • 4 chicken breasts
  • 2 cups of rice
  • 4 cups of water
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons of olive oil or cooking spray

Instructions

  1. Rinse the rice under cold water to remove any excess starch. Drain well.
  2. In a large pot, bring the water to a boil. Add the rice and a pinch of salt. Reduce the heat to low and cover the pot. Let the rice simmer for about 15-20 minutes or until all the water is absorbed and the rice is tender.
  3. Season the chicken breasts with salt and pepper on both sides.
  4. Heat the olive oil or cooking spray in a large skillet over medium heat.
  5. Add the chicken breasts to the skillet and cook for about 6-8 minutes on each side, or until they reach an internal temperature of 165°F (74°C).
  6. Once cooked, remove the chicken from the skillet and let it rest for a few minutes before slicing.
  7. Serve the cooked chicken breasts over a bed of fluffy rice.
