Quick and Easy Chicken Pepperoni Pasta

This recipe is perfect for a quick and delicious dinner for 4 people. With the combination of tender chicken and savory pepperoni, your taste buds are sure to dance with joy!

Ingredients

  • 400g chicken breasts, cut into bite-sized pieces
  • 100g pepperoni slices, chopped
  • 300g pasta of your choice
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 can (400g) diced tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and black pepper to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Cook the pasta according to the package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant.
  3. Add the chicken pieces to the skillet and cook until no longer pink in the center. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the chopped pepperoni and cook until crispy. Remove the pepperoni from the skillet and set aside.
  5. In the same skillet, add the diced tomatoes and tomato paste. Stir in the dried oregano and basil. Season with salt and black pepper to taste.
  6. Simmer the tomato sauce for a few minutes until it thickens slightly.
  7. Add the cooked chicken and crispy pepperoni back into the skillet. Stir to combine and let them heat up together for a couple of minutes.
  8. Add the cooked pasta to the skillet and toss it in the sauce until well coated.
  9. Serve the Chicken Pepperoni Pasta hot, garnished with fresh basil leaves.
