Quick and Easy Chicken Pepperoni Pasta

This recipe is perfect for a quick and delicious dinner for 4 people. With the combination of tender chicken and savory pepperoni, your taste buds are sure to dance with joy!
Ingredients
- 400g chicken breasts, cut into bite-sized pieces
- 100g pepperoni slices, chopped
- 300g pasta of your choice
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 can (400g) diced tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and black pepper to taste
- Fresh basil leaves, for garnish
Instructions
- Cook the pasta according to the package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant.
- Add the chicken pieces to the skillet and cook until no longer pink in the center. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped pepperoni and cook until crispy. Remove the pepperoni from the skillet and set aside.
- In the same skillet, add the diced tomatoes and tomato paste. Stir in the dried oregano and basil. Season with salt and black pepper to taste.
- Simmer the tomato sauce for a few minutes until it thickens slightly.
- Add the cooked chicken and crispy pepperoni back into the skillet. Stir to combine and let them heat up together for a couple of minutes.
- Add the cooked pasta to the skillet and toss it in the sauce until well coated.
