Delicious and nutritious Greek-inspired soup perfect for a quick weeknight meal. Combines fennel bulb and hemp seeds with a rich broth for a comforting dish ready in under 30 minutes.


  • 2 tablespoons olive oil
  • 1 large fennel bulb, thinly sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken or vegetable broth
  • 1/2 cup hemp seeds
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic to the pot.
  3. Sauté for about 5 minutes, until the onion is translucent and the garlic is fragrant.
  4. Add the thinly sliced fennel bulb to the pot.
  5. Pour in the chicken or vegetable broth and bring the mixture to a boil.
  6. Reduce the heat to a simmer and cook for about 15 minutes, until the fennel is tender.
  7. Add the hemp seeds to the pot and cook for an additional 5 minutes.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with fresh parsley if desired.
