Ingredients
- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon taco seasoning (store-bought or homemade)
- 1/2 cup diced tomatoes (canned or fresh)
- 1/2 cup black beans, rinsed and drained
- Salt and pepper, to taste
- 4 small corn or flour tortillas
- Toppings: shredded lettuce, diced avocado, salsa, shredded cheese, sour cream (optional)
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the diced onion and sauté for about 2-3 minutes until translucent.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
- Sprinkle in the taco seasoning and stir well to combine. Add the diced tomatoes and black beans, mixing until everything is heated through. Season with salt and pepper to taste.
- While the turkey mixture is cooking, warm the tortillas in a separate pan or microwave for about 15-30 seconds until soft.
