Quick and Easy Japanese-Inspired Fish and Potato Stew

A Delicious and Hearty Stew for 4 People
Ingredients
- 1 can of tuna (drained and flaked)
- 1 can of sardines (drained and chopped)
- 2-3 medium-sized potatoes, peeled and diced
- 1 can of mixed vegetables (such as peas, carrots, and corn)
- 2 cups of water
- 2 tablespoons of soy sauce
- 1 tablespoon of sake (optional)
- Instant Pot or a large saucepan
- Salt and pepper to taste
Instructions
- Add the diced potatoes, tuna, sardines, mixed vegetables, and water to the Instant Pot.
- Close the lid and make sure the valve is set to 'sealing'.
- Press the 'manual' or 'pressure cook' button and set the cooking time to 5 minutes at high pressure.
- Let the pressure release naturally for 5 minutes, then quick-release any remaining pressure.
- Add the soy sauce and sake (if using) to the stew and stir to combine.
- Taste and adjust the seasoning as needed.
- Serve hot, garnished with chopped green onions and a sprinkle of toasted sesame seeds if desired.
