Quick and Easy Mexican-Style Mushroom and Peanut Butter Roast

Ingredients
- 1 pound roast (beef or pork, your choice)
- 2 cups mushrooms, sliced
- 2 tablespoons peanut butter
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup beef broth or water
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
- Tortillas or rice for serving
Instructions
- Prepare the Microwave: Preheat your microwave to its highest setting. This will be used to quickly soften the peanut butter mixture.
- Cook the Roast: Heat the olive oil in a large skillet over medium-high heat. Season the roast with salt and pepper, then brown it on all sides. This should take about 5-7 minutes.

- Prepare the Peanut Butter Mixture: In a microwave-safe bowl, combine the peanut butter and beef broth (or water). Microwave on high for about 30 seconds, or until the peanut butter is melted and easily stirrable.
- Combine Everything: Return the roast to the skillet, nestling it among the vegetables. Pour the peanut butter mixture over the top, ensuring everything is well-coated. Reduce the heat to low, cover, and simmer for about 20 minutes or until the roast is cooked through and tender.
