Roast, Mushroom, peanut butter, microwave

Combining savory flavors of roast, earthy mushrooms, and creamy peanut butter. Perfect for a quick weeknight dinner for four.

Ingredients

  • 1 pound roast (beef or pork, your choice)
  • 2 cups mushrooms, sliced
  • 2 tablespoons peanut butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup beef broth or water
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)
  • Tortillas or rice for serving

Instructions

  1. Prepare the Microwave: Preheat your microwave to its highest setting. This will be used to quickly soften the peanut butter mixture.
  2. Cook the Roast: Heat the olive oil in a large skillet over medium-high heat. Season the roast with salt and pepper, then brown it on all sides. This should take about 5-7 minutes.
  3. Sauté the Vegetables: Remove the roast from the skillet and set it aside. In the same skillet, add the chopped onion and garlic. Sauté for about 3 minutes until they are fragrant and translucent.
  4. Add Mushrooms and Spices: Add the sliced mushrooms, cumin, and chili powder to the skillet. Cook for an additional 5 minutes until the mushrooms are tender.
  5. Prepare the Peanut Butter Mixture: In a microwave-safe bowl, combine the peanut butter and beef broth (or water). Microwave on high for about 30 seconds, or until the peanut butter is melted and easily stirrable.
  6. Combine Everything: Return the roast to the skillet, nestling it among the vegetables. Pour the peanut butter mixture over the top, ensuring everything is well-coated. Reduce the heat to low, cover, and simmer for about 20 minutes or until the roast is cooked through and tender.
  7. Serve: Once cooked, slice the roast and serve it with the mushroom and peanut butter sauce over tortillas or rice. Garnish with fresh cilantro if desired.
