Quick and Easy Quinoa Lettuce Skillet

Looking for a healthy and delicious meal that's ready in no time? This Quinoa Lettuce Skillet is perfect for a quick weeknight dinner. Packed with nutrients and flavor, it's sure to be a hit with the whole family!
Ingredients
- 1 cup quinoa
- 4 cups lettuce, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water. In a medium pot, combine 2 cups of water and the quinoa. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the water is absorbed and the quinoa is tender. Fluff with a fork and set aside.
- While the quinoa is cooking, wash and chop the lettuce into bite-sized pieces.
- In a large skillet, heat the olive oil over medium heat. Add the chopped lettuce and sauté for about 2-3 minutes until it starts to wilt.
- Add the cooked quinoa to the skillet with the lettuce. Toss everything together until well combined. Season with salt and pepper to taste.
- Divide the quinoa and lettuce mixture evenly among four plates. Drizzle with a little extra olive oil if desired.
