Ingredients

  • 1 pound of shrimp
  • 2 cups of rice
  • 4 cups of water
  • 1 tablespoon of olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of paprika
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until they become translucent and fragrant.
  2. Add the shrimp to the skillet, and cook until they turn pink and opaque. This should take about 3-4 minutes on each side. Remove the shrimp from the skillet and set them aside.
  3. In the same skillet, add the rice and toast it for a couple of minutes, stirring constantly. This will give the rice a nice nutty flavor.
  4. Add the water, paprika, salt, and black pepper to the skillet. Stir everything well to combine. Bring the mixture to a boil, then reduce the heat to low. Cover the skillet with a lid and let the rice simmer for about 15-20 minutes, or until the liquid is absorbed and the rice is fluffy.
  5. Once the rice is cooked, add the cooked shrimp back to the skillet. Gently fold them into the rice, making sure they are evenly distributed.
