Instructions
- Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a medium pot, bring to a boil, then reduce to low heat, cover, and simmer for about 18 minutes or until the water is absorbed. Remove from heat and let it sit covered for 10 minutes.
- Once the rice has rested, fluff it with a fork and, if desired, mix in a tablespoon of rice vinegar for added flavor.
- Lay a sheet of nori, shiny side down, on a bamboo sushi mat or a clean cutting board.
- Wet your hands to prevent sticking, then take about half of the sushi rice and evenly spread it over the nori, leaving about an inch at the top edge.
- If you like a kick, spread a thin line of wasabi over the rice. Adjust to your taste!
- Starting from the bottom, use the mat to gently roll the sushi away from you, tucking it tightly as you go. Roll until you reach the edge of the nori, then wet the edge with a bit of water to seal the roll.
- Using a sharp knife, slice the roll into bite-sized pieces. Wipe the knife with a damp cloth between cuts for clean edges.
- Arrange the sushi on a plate, serve with soy sauce for dipping, and garnish with pickled ginger on the side.
