Quick and Nutritious Protein-Packed Spinach Stew

Looking to whip up a quick and nutritious meal? This protein-packed spinach stew is your answer! Full of flavor and ready in no time thanks to the pressure cooker, it's perfect for a busy weeknight dinner.
Ingredients
- 2 scoops of Whey Protein
- 4 cups fresh Spinach, washed and chopped
- 2 cans mixed vegetables, drained
- 1 cup vegetable broth
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
Instructions
- Chop the onion and garlic.
- Wash and chop the spinach.
- Set your pressure cooker to the sauté function.
- Add the olive oil and let it heat up.
- Sauté the chopped onion and minced garlic until they are soft and fragrant, about 3-4 minutes.
- Add the chopped spinach to the pressure cooker and sauté until wilted, about 2 minutes.
- Stir in the drained mixed vegetables.
- Pour in the vegetable broth.
- Add the dried thyme, dried oregano, salt, and pepper.
- Mix well to combine all the ingredients.
- Close the lid of the pressure cooker and set it to high pressure for 5 minutes.
- Once the cooking time is up, carefully release the pressure following the manufacturer's instructions.
- Open the lid and set the pressure cooker back to the sauté function.
- Mix in the whey protein until fully dissolved and the stew is slightly thickened.
- Ladle the stew into bowls and enjoy hot!
