Quick & Easy Quinoa Stir-Fry

A Delicious and Nutritious Meal for 4


  • 1 cup quinoa
  • 2 bell peppers, sliced
  • 2 tbsp soy sauce
  • 1/4 cup water


  1. Cook the quinoa according to package instructions. Set aside.
  2. In a microwave-safe bowl, combine sliced bell peppers and 1 tablespoon of soy sauce. Microwave for 1 minute, or until peppers are tender.
  3. In a large skillet, heat the remaining 1 tablespoon of soy sauce over medium-high heat.
  4. Add the cooked quinoa to the skillet and stir to combine with soy sauce.
  5. Add the microwaved bell peppers to the skillet and stir to combine with quinoa and soy sauce.
  6. Cook for an additional 2-3 minutes, stirring frequently, until quinoa is lightly toasted.
  7. Serve hot and enjoy!
