Ingredients
- 1/4 cup quinoa
- 1/2 cup water
- 1 medium carrot, grated
- 1 tablespoon olive oil
- 1 clove garlic, minced
- Salt and pepper to taste

Instructions
- Rinse the quinoa under cold water to remove any bitterness.
- In a small pot, combine the quinoa and water. Bring to a boil.
