Quinoa and Cauliflower Stir-Fry

This quick and easy Quinoa and Cauliflower Stir-Fry is perfect for a healthy weeknight dinner. It's packed with nutrients and flavor, and it all comes together in a snap using your rice cooker!
Ingredients
- 1 cup quinoa
- 1 small head of cauliflower, cut into florets
- 1/4 cup soy sauce
- 2 cups water
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 small onion, diced
- 1 bell pepper, diced
- 1 cup frozen peas
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Green onions, sliced (optional, for garnish)
- Sesame seeds (optional, for garnish)
Instructions
- Rinse the quinoa under cold water.
- Add the quinoa and 2 cups of water to your rice cooker. Close the lid and set it to the 'Cook' setting. Let it cook until the rice cooker switches to 'Warm.'
- While the quinoa is cooking, steam the cauliflower florets until they are just tender, about 5-7 minutes. Set aside.
- In a large skillet or wok, heat the olive oil over medium-high heat.
- Add the garlic and onion, and sauté until the onion becomes translucent.
- Toss in the bell pepper and cook for another 3-4 minutes until softened.
- Lower the heat to medium and add the steamed cauliflower florets and frozen peas to the skillet.
- Pour in the soy sauce and sesame oil, stirring to combine everything well.
- Add the cooked quinoa and mix everything together. Cook for another 2-3 minutes until everything is heated through.
- Season with salt and pepper to taste.
- Garnish with sliced green onions and sesame seeds if desired.
