Quinoa Cabbage Fritters

These quinoa cabbage fritters are a delightful and healthy option for a light meal or appetizer. Packed with the goodness of quinoa and the crunchiness of cabbage, these fritters are easy to make and incredibly delicious.
Ingredients
- 1 cup cooked quinoa
- 2 cups shredded cabbage
- 1 teaspoon baking powder
- Salt and pepper to taste
- Olive oil for frying
Instructions
- In a food processor, pulse the cooked quinoa and shredded cabbage until well combined.
- Transfer the mixture to a bowl and add baking powder, salt, and pepper. Mix well.
- Heat a non-stick pan over medium heat and add a drizzle of olive oil.
- Using a spoon, scoop the quinoa cabbage mixture and form small patties. Place them on the pan and flatten gently with a spatula.
- Cook for 3-4 minutes on each side or until golden brown and crispy.
- Remove from the pan and place on a paper towel to drain excess oil.
- Serve the quinoa cabbage fritters hot with your favorite dipping sauce.
