Quinoa Greek Salad

This refreshing and nutritious Greek-inspired quinoa salad combines the hearty texture of quinoa with the crispness of fresh lettuce. Perfect for a light lunch or a side dish, this recipe is designed to serve 4 people.
Ingredients
- 1 cup quinoa
- 2 cups water
- 1 head of lettuce, chopped
- 1 tablespoon sugar
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Rinse the quinoa thoroughly under cold water.
- In a medium saucepan, bring 2 cups of water to a boil.
- Add the quinoa to the boiling water, reduce the heat to low, and cover the saucepan. Let it simmer for about 15 minutes or until the water is fully absorbed.
- Remove the saucepan from the heat and let the quinoa sit, covered, for 5 minutes. Fluff with a fork and set aside to cool.
- While the quinoa is cooking, wash and chop the lettuce into bite-sized pieces.
- Place the lettuce in a large mixing bowl.
- In a small bowl, combine the sugar, olive oil, lemon juice, salt, and pepper. Whisk until the sugar is dissolved and the dressing is well combined.
- Once the quinoa has cooled, add it to the bowl with the chopped lettuce.
- Pour the dressing over the quinoa and lettuce mixture.
- Toss everything together until the quinoa and lettuce are evenly coated with the dressing.
- Divide the salad into 4 portions.
- Serve immediately and enjoy!
