Ingredients
- 1 medium eggplant, diced
- 2 zucchini, sliced
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 cups diced tomatoes (canned or fresh)
- 3 cloves garlic, minced
- 1/4 cup olive oil
- 1 tsp dried thyme
- 1 tsp dried basil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the onion and garlic, sauté until softened.
- Stir in the eggplant and bell pepper, cooking for about 5 minutes.
- Add the zucchini and diced tomatoes, mix well.
- Season with thyme, basil, salt, and pepper.
- Cover and simmer for 20-25 minutes, stirring occasionally.
- Serve hot and enjoy!
