Mediterranean Chickpea Salad

This delicious Mediterranean-style salad is perfect for a light lunch or dinner. The combination of chickpeas, olives, tomatoes, and feta cheese creates a refreshing and nutritious meal packed with flavor.
Ingredients
- 1 can of chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1/2 cup sliced Kalamata olives
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup diced red onion
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon freshly squeezed lemon juice
- Salt and pepper, to taste
Instructions
- In a large bowl, combine the chickpeas, cherry tomatoes, Kalamata olives, feta cheese, parsley, and red onion.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
