Rice and Corn Salsa

Ingredients

  • 2 cups of rice
  • 1 cup of corn kernels
  • 1 cup of salsa
  • 1 rice cooker

Instructions

  1. Rinse the rice well under cold water until the water runs clear. Drain excess water.
  2. Place the rinsed rice into the rice cooker along with 4 cups of water. Close the lid and set the cooker to cook the rice.
  3. While the rice is cooking, prepare the corn salsa. In a medium-sized bowl, combine the corn kernels and salsa. Mix well to evenly distribute the salsa over the corn kernels.
  4. Once the rice is cooked, let it sit for a few minutes to cool down slightly before fluffing it with a fork.
  5. Serve the cooked rice onto plates or bowls.
  6. Spoon the corn salsa over the rice, spreading it evenly.
  7. Garnish with fresh cilantro or any desired herbs.
