Rice and Veggie Bowl

What Started it all:
rice, cherry tomatoes, corn, salsa

This recipe serves four people. Adjust the quantities accordingly for more or fewer servings.

Ingredients

  • 2 cups of rice
  • 1 cup of cherry tomatoes, halved
  • 1 cup of corn kernels
  • 1 cup of salsa
  • Salt and pepper to taste

Instructions

  1. Cook the rice according to the package instructions.
  2. In a large skillet, heat some oil over medium heat.
  3. Add the cherry tomatoes and corn kernels to the skillet and sauté for about 5 minutes, or until they start to soften.
  4. Stir in the salsa and cook for an additional 2 minutes.
  5. Season with salt and pepper to taste.
  6. Divide the cooked rice among four bowls.
  7. Top each bowl with the sautéed tomato-corn mixture.
  8. Serve hot and enjoy your delicious Rice and Veggie Bowl!
