Rice and Veggie Bowl
What Started it all:
rice, cherry tomatoes, corn, salsa
This recipe serves four people. Adjust the quantities accordingly for more or fewer servings.
Ingredients
- 2 cups of rice
- 1 cup of cherry tomatoes, halved
- 1 cup of corn kernels
- 1 cup of salsa
- Salt and pepper to taste
Instructions
- Cook the rice according to the package instructions.
- In a large skillet, heat some oil over medium heat.
- Add the cherry tomatoes and corn kernels to the skillet and sauté for about 5 minutes, or until they start to soften.
- Stir in the salsa and cook for an additional 2 minutes.
- Season with salt and pepper to taste.
- Divide the cooked rice among four bowls.
- Top each bowl with the sautéed tomato-corn mixture.
- Serve hot and enjoy your delicious Rice and Veggie Bowl!
