Ingredients
- 2 cups of rice
- 1 pound of roast beef, thinly sliced
- 2 cups of gravy
- 4 large eggs
- 2 tablespoons of vegetable oil
- Salt and pepper to taste
- Optional garnish: chopped parsley or green onions
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a medium pot, combine the rice with 4 cups of water and a pinch of salt. Bring to a boil over high heat.
- Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the water is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork before serving.
- In a medium saucepan, heat the gravy over medium heat until it starts to simmer.
- Add the thinly sliced roast beef to the gravy and cook for about 5 minutes, or until the beef is heated through. Stir occasionally.
- Heat the vegetable oil in a non-stick skillet over medium heat.
- Crack the eggs into the skillet, being careful not to break the yolks.
- Cook the eggs to your desired doneness. For sunny-side-up, cook for about 2-3 minutes until the whites are set but the yolks are still runny. For over-easy, flip the eggs gently and cook for an additional 1-2 minutes.
- Divide the cooked rice evenly among four bowls.
- Top each bowl of rice with a portion of the roast beef and gravy.
- Place a cooked egg on top of each bowl.
- Season with salt and pepper to taste and garnish with chopped parsley or green onions if desired.
