This Italian-inspired recipe for roast beef and potatoes is hearty and filling. Perfect for a family dinner or a special occasion.
Ingredients
- 2 lbs roast beef
- 4 large potatoes
- 2 tbsp olive oil
- 1 tbsp rosemary
- 1 tbsp garlic powder
- salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Wash and cut the potatoes into wedges.
- In a large bowl, combine the potatoes, olive oil, rosemary, garlic powder, salt, and pepper. Mix well until the potatoes are coated.
- Place the roast beef in a roasting pan and surround it with the potatoes.
- Roast in the oven for 1 1/2 - 2 hours, or until the roast beef is cooked through and the potatoes are tender.
- Serve hot with your choice of seasonal vegetables and a glass of red wine.
