Ingredients
- 1.5 kg roast beef
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried oregano
- 1 teaspoon paprika
Instructions
- Preheat the oven to 180°C (350°F).
- In a small bowl, mix together the salt, black pepper, garlic powder, dried thyme, dried rosemary, dried oregano, and paprika.
- Rub the roast beef with olive oil, then sprinkle the herb and spice mixture evenly over the surface of the roast.
- Place the roast beef on a roasting rack in a roasting pan, fat side up.
- Insert a meat thermometer into the thickest part of the roast, making sure it does not touch the bone.
- Roast the beef in the preheated oven for about 20 minutes per pound for medium-rare (or until the desired level of doneness is reached), or until the internal temperature reaches 55-60°C (130-140°F) for medium-rare.
- Remove the roast beef from the oven and tent it loosely with aluminum foil. Let it rest for about 15 minutes before slicing.
- Slice the roast beef thinly against the grain and serve hot.
