Ingredients

  • 1.5 kg roast beef
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a small bowl, mix together the salt, black pepper, garlic powder, dried thyme, dried rosemary, dried oregano, and paprika.
  3. Rub the roast beef with olive oil, then sprinkle the herb and spice mixture evenly over the surface of the roast.
  4. Place the roast beef on a roasting rack in a roasting pan, fat side up.
  5. Insert a meat thermometer into the thickest part of the roast, making sure it does not touch the bone.
  6. Roast the beef in the preheated oven for about 20 minutes per pound for medium-rare (or until the desired level of doneness is reached), or until the internal temperature reaches 55-60°C (130-140°F) for medium-rare.
  7. Remove the roast beef from the oven and tent it loosely with aluminum foil. Let it rest for about 15 minutes before slicing.
  8. Slice the roast beef thinly against the grain and serve hot.
