Ingredients

  • 2 pounds of roast beef
  • 1 tablespoon of salt
  • 1 tablespoon of black pepper
  • 3 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 onion, chopped
  • 4 carrots, peeled and sliced
  • 4 potatoes, peeled and chopped
  • 1 cup of beef broth

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Season the roast beef with salt, pepper, and minced garlic.
  3. Heat olive oil in a large baking dish over medium heat.
  4. Sear the beef until browned on all sides.
  5. Add onions, carrots, and potatoes to the baking dish.
  6. Pour beef broth over the vegetables and beef.
  7. Cover the dish with foil and transfer it to the oven.
  8. Cook for 1 hour 30 minutes or until the beef is cooked through.
  9. Remove the foil and cook for an additional 15-20 minutes or until the vegetables are tender and the beef is browned on top.
  10. Let it rest for 10 minutes, then slice and serve with the cooked vegetables.
