Ingredients
- 2 pounds of roast beef
- 1 tablespoon of salt
- 1 tablespoon of black pepper
- 3 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 onion, chopped
- 4 carrots, peeled and sliced
- 4 potatoes, peeled and chopped
- 1 cup of beef broth
Instructions
- Preheat the oven to 350°F (175°C).
- Season the roast beef with salt, pepper, and minced garlic.
- Heat olive oil in a large baking dish over medium heat.
- Sear the beef until browned on all sides.
- Add onions, carrots, and potatoes to the baking dish.
- Pour beef broth over the vegetables and beef.
- Cover the dish with foil and transfer it to the oven.
- Cook for 1 hour 30 minutes or until the beef is cooked through.
- Remove the foil and cook for an additional 15-20 minutes or until the vegetables are tender and the beef is browned on top.
- Let it rest for 10 minutes, then slice and serve with the cooked vegetables.
