Roast Beef with Root Beer Marinade Recipe

Ingredients

  • 2 pounds of roast beef
  • 12 ounces of root beer
  • 1/2 cup of soy sauce
  • 1/4 cup of brown sugar
  • 2 cloves of garlic, minced
  • 1 teaspoon of black pepper
  • 1 teaspoon of onion powder
  • 1 teaspoon of paprika
  • 1 tablespoon of olive oil
  • Salt to taste

Instructions

  1. In a large bowl, combine root beer, soy sauce, brown sugar, garlic, black pepper, onion powder, and paprika.
  2. Place the roast beef into the bowl and coat with the marinade. Cover and refrigerate for at least 2 hours or overnight.
  3. Preheat the oven to 375°F.
  4. Heat the olive oil in a skillet over medium heat.
  5. Remove the roast beef from the marinade and pat dry with paper towels. Sprinkle with salt.
  6. Sear the roast beef for 2-3 minutes on each side or until browned.
  7. Transfer the beef to a baking dish and pour the remaining marinade over it.
  8. Roast the beef in the oven for 25-30 minutes or until the internal temperature reaches 135°F for medium-rare.
  9. Remove from oven and let rest for 10 minutes.
  10. Slice the beef against the grain and serve with your favorite sides.
