Instructions

  1. Preheat oven to 350°F.
  2. In a large roasting pan, season the beef with salt and pepper.
  3. Surround the beef with the sliced carrots and chopped potatoes.
  4. Drizzle the olive oil over everything in the pan.
  5. Cover the pan with foil and roast for 1 hour and 30 minutes.
  6. After the first hour and 30 minutes, remove the foil and continue to roast for an additional 30 minutes.
  7. Remove from the oven, let it cool for a few minutes, and slice the beef.
  8. Serve the roast beef with the cooked vegetables on the side.
